When it comes to the "local specialties" of Zhenjiang, we cannot ignore the pot
lid noodles of Zhenjiang. As is well known, there are "three monsters" in
Zhenjiang, namely "vinegar cannot be spoiled, meat should not be cooked
properly, and a lid should be used to cook in a noodle pot".
Zhenjiang Guogai Mian, also known as Huomian, is well-known in Zhenjiang and is
probably also well-known throughout the country. The method is not complicated:
knead the flour and roll it into thin slices, then cut it finely with a knife,
cook it in a small pot with a lid, remove it and put it in a bowl with
seasoning. The characteristics of pot lid noodles are appropriate softness and
hardness, good flexibility of the noodles, suitable for all ages. However, it is
precisely this uncomplicated method of cooking noodles that is hailed as a
pioneering achievement in the culinary skills of the people of Zhenjiang.
