When it comes to the "local specialties" of Zhenjiang, we cannot ignore the pot lid noodles of Zhenjiang. As is well known, there are "three monsters" in Zhenjiang, namely "vinegar cannot be spoiled, meat should not be cooked properly, and a lid should be used to cook in a noodle pot".
Zhenjiang Guogai Mian, also known as Huomian, is well-known in Zhenjiang and is probably also well-known throughout the country.
