Crystal trotters (not suitable for meat dishes)

Zhenjiang's meat dishes, also known as crystal meat hooves, have white skin, white flesh, red color, transparent braised jelly, and shiny pieces, which are extremely cute. It is fat but not greasy, crispy and tender. If dipped in ginger vinegar again, it will have a unique flavor that can make the taster feel tender, crispy and fresh.
In the past, people in Zhenjiang had a habit of eating meat dishes. In the morning, they would go to a restaurant, make a pot of tea, put a plate of ginger shreds, and dip the meat dishes in vinegar ginger shreds. So there is a saying of 'inappropriate dishes'.  
Crystal trotters are a famous dish in Zhenjiang with a history of more than 300 years. The crystal trotters at the "Yanchun Restaurant" in Zhenjiang are truly worthy of their reputation. When crystal dishes are served on the table, different types of dishes can be cut according to their meat quality, such as "glasses dishes", "jade belt hook dishes", "lantern stick dishes", "triangular edge dishes", etc.
