Danyang Sealed Jar Wine

Sealed jar
wine belongs to the sweet type of Huangjiu, which is a unique Chinese liquor and
is known as one of the world's three ancient wines along with wine and beer.
Danyang Fenggang liquor is renowned for its light taste with dew on flowers and
a color resembling spring in a cave. The brewing process of sealed jar wine is
extremely exquisite, using glutinous rice as raw material and wheat koji as
saccharification and fermentation agent. When the sugar content in the mash
reaches its peak, mix it with Xiaoqu rice wine at a temperature of 50 degrees or
above, seal the jar immediately, and after a certain period of time, extract 60%
of the clear liquid and press it. Then, mix it proportionally and pour it into a
quantitative jar, seal it tightly, and store it for 2-3 years. Brewed into wine
with a brownish red color, rich aroma, fresh and sweet taste, and a alcohol
content of over 14 degrees, it is a top-grade yellow wine. In 1984, Danyang
Fenggang Wine won the National Silver Award and ranked first in the national
sweet yellow wine competition.
