Stewed crab meat and lion head

Also known as chopped
meat, it is a traditional famous dish in Zhenjiang. Crab meat and pork, the main
ingredients, are cut to make Rice-meat dumplings. Because they are not colored
with soy sauce and wine when cooking, they are called clear stew. They are also
large and round in shape, which is an exaggerated metaphor for a lion's head.
This dish is stewed in casserole. When it is hot, serve it on the table, cover
it with soup leaves, remove the leaves, and you can see only Taiwanese
Meatballs.
