清炖蟹肉狮子头
又称斩肉,镇江传统名菜。主料蟹肉和猪肉,斩切做肉丸,因烹调时不用酱酒着色,故称清炖,又因造型大而圆,夸张比喻为狮子头。此菜用砂锅炖制,趁热上桌,汤菜叶覆盖,揭去菜叶,就可见只只肉圆。
