Steamed catfish

Zhenjiang's catfish is
the most plump, fresh, and tender. It is mainly steamed without removing scales,
and is steamed again when eaten. Due to the high fat content of the scales, it
is steamed with scales and has a silver white color. The meat is refreshing but
not greasy. Usually dipped in ginger powder and vinegar, it has a better taste
and is one of the Eight Treasures of ancient times. Guo Moruo once praised the
deliciousness of Zhenjiang catfish with the phrase 'The time for catfish has
passed, and there is a fragrance of sacrifice on the teeth and cheeks'.
