Steamed catfish

Zhenjiang's catfish is the most plump, fresh, and tender. It is mainly steamed without removing scales, and is steamed again when eaten. Due to the high fat content of the scales, it is steamed with scales and has a silver white color. The meat is refreshing but not greasy.
